Blueberry Coffee Cake Muffins


On Sunday we had some of our friends over for brunch and I took Stephanie's recommendation and made these blueberry coffee cake muffins.  They were easy to make, delicious, and in my opinion tasted best right out of the oven.  I served the muffins with with peach mango mimosa's, a mushroom and spinach quiche,  and fresh berries topped with vanilla yogurt.

I will be trying this recipe ASAP. Love blueberry muffins. Any recipe to change it up a bit is exciting for me. Every time I attend a brunch I make Cinnamon Orange Strussel Muffins. Best muffin recipe I've ever tried.

My go to Sunday morning recipe is Flour's banana bread. STILL. It's just so easy, and I always keep some frozen bananas in the freeze, at the ready!

Fresh OJ, frittata and muffins are my go to for brunch. I trust ur judgement when it comes to cooking ( ur banana/pineapple cake is a fav. in my house and so is the cilantro-prawns recipe), so I have downloaded this recipe and will bake it this sunday!

These look and sound perfect for a brunch! Can always count on Stephanie when it comes to food recommendations... Love that.

Oh, and to answer your question about the strawberry sauce, we use it on frozen yogurt or non-frozen yogurt, ice cream, waffles, pancakes (I make it w/ maple syrup then), strawberry shortcake, in lemonade- to make strawberry lemonade, ... still coming up with more ways to use it!

Yum!!! I always go for blueberry muffins when I'm making brunch too. I have a great recipe from my mother. They always come out perfect (which says a lot because I'm not a baker). I've actually been dying to try to make some sort of delicious quiche or frittata, but again, I'm worried it might be too complicated since I'm not really a world class chef. I think I'll keep it simple for the time being.
